Send them to me!!! The walnuts are so dry they are cracking going through the huller down here.;)

we don't have hazle nuts around ct. but we have a few walnuts and a lot of hickory nuts. in our younger years in outdoor weather someone always brought hickory nuts and a hammer to almost every party. ever watch picnic tables full of people feeling good trying to extract the nuts from the shell? it is almost as fun as a late summer early fall out door crab boil keg party. now that is a messy fun sight to see.

The oregon ag extension says I need to get them in drying within 24 hours... it's been about 72.
I guess I'll try and roast them as is in the oven. The old timer likes to just hang him above his wood stove in onion bags, but I don't have that luxury, and his had some mold... I guess the valley is just too humid, if you want, I can send some but I don't know if they'll mold..

We have more nuts around here than we know what to do with! Right now they're on the road all headed to S. Florida. HEHEHE.

It's been a great year for hazelnuts here in the UK too ... I got sackfuls of the things.

Get them drying as quick as you can ... spread them out in a big basket or something like that so the initial moisture can get out of them - a warm dry room will do. They don't need the kind of heat like in a flue curing setup - and they definitely don't want the humidity - keep that as close to 0% as you can and they will dry nicely.

Once they have been out for 5 days to a week you can put them in a breathable sack to finish off. The raw nuts will get sweeter as they continue to dry out and within a month or so they'll be ready to eat. You can roast them then and they'll be nicer than if you roast them still green.
