I opened my airlock perique yesterday and noted the aroma of olives was starting to form. This is good news because Pichia anomala is responsible for olive fermentation. Reference: https://www.ncbi.nlm.nih.gov/pubmed/15771183
China, can explain to me better? When I made my perique with the green sheets(leaves), I had this strong smell of black olives today disappeared...

If you can maintain the humidity, then you're set. 90ºF is fine for curing green leaf, as long as you can keep the humidity high enough to avoid flash drying. It sounds like you are on top of the situation.
My shed is just a shed with ventilation and a fan. So I get nervous if the temp approaches freezing, while I have green leaf hanging. Actually, it's been so dry here, that I think some of my last top leaf (Piloto Cubano and Corojo 99) are going to end up with a lot of green, even though the temps have stayed well above 40ºF at night.
