With theese cooler temps, I will attempt to smoke some cheese this week. It should help with keep'n the smoker cool.
i have a meadow creek 250 smoker and it is a stickburner but i coldsmoke with a old burnt out coffee can with a lot of holes in it with a little charcoal covered with woodchunks. as long as it is in the fifties or lower i can smoke cheddar and grains without melting the cheese or killing the enzimes in the grain. i like apple wood with the cheddar and hickory for the corn and other grains.

I love smokeing with apple, but do not have any. I will be using persimmon, malberry & cherry for the jerky. The coffee can sounds interesting. May have to give it a try.

does anyone burn wood in a woodstove for heat in the winter and harvest large almost log like hot coals and put them into an air tite metal container? i do then take them out a few days later and use it for charcoal. it is the best lump charcoal you can't buy.

i make it all the time. after you throw the hot hard coals in a airtite container and wait a couple of days you can store it in a bucket with a cover. make sure it is all the way out if it isn't it will light back up as soon as it gets oxygen. one of my friends throws sand on an outside bond fire and digs up the charcoal up in a couple of days.

I do burn wood as my primary heat. Haven't tried the charcoal trick, but the coals work great to get my smoker going faster!

Well --I re- done that Fire box Myself from junk. "THANK YOU"!! Now it is for sale so I can do an early 1900"s singer. Like this one -Befor and aft. pics. The parlor stove is Circa 1875. 1,200 USD. I personaly put in over 2-24 hund to do it--
