The trays will need to fit closer to accomplish that. Its going to be cold and dry next week. If this is any indication of how winter will be its not going to an easy grow.
It may be wiser to spend the winter reading topics in the Key Forum Threads and Grow Blogs while making preparations for Spring.
@JungleGhost, if you would like, I can combine your 4 blogs into a single grow log, to make it easier for others to follow along.

I was wondering which direction your nook faces and if there is a way to make an enclosure with plastic film? How many hours of light a day does it get?
Since we have frost temps in a few days, and if you have to restart, you may consider starting them indoors where its somewhat warm. An airtight plastic tray (tupperware or product packaging) with either paper towel or TP in the bottom, a couple drops of water, a few seeds on top and seal the thing up. In 4 to 7 days you will have sprouts that you can transfer to soil with an appropriate amount of moisture.

You can use a peanut butter jar laid on it's side for a baby greenhouse. Small amount of soil, seed, screw on lid, lay on side where it's warm. When sprouts come up just dump out the soil, pick out the sprouts, transplant to cells or pots. Moist soil but not wet, should feel like a wrung out sponge.
