Hmmm, I've never had purple string beans - will need to try some. My gut says yes, due to my experience with purple carrots and potatoes though.

I saved your recipe, it sounds delicious. I also make saurkraut with it.If you cook red cabbage with some acid (vinegar) it will remain red. If your dish becomes too basic (used baking soda, etc) it will turn blue/green.
German Red Cabbage: 1 onion, 1 apple, 1 red cabbage, 1/3 cup sugar, 1/3 cup vinegar, S&P to taste. Simmer for one hour. Delicious! Great with sausages, knoedel, rouladen, etc.

Welcome to the forum!Arizona gardener with brussel sprouts, two different tomatoes, three different potatoes, three different lettuces, two different kales, green onions, cilantro, green bell and jalapeno, cayenne, tomatillos, swiss chard, and cucumber. In the opposite side of the brussels I have long red, dixie, virginia 12, and little dutch tobacco growing!

Strangely enough I’m pretty short (5’8”) with normal sized arms, lol.Wow...u got some long arms! Lol Nice!
Put em in the ground, lol they look ready. I used to save a few seed potatoes in a styrofoam ice chest during winter, they would be ready plant in spring . I just did 5 lbs of red this year. There all starting to boom, I have hoed up extra dirt around stems twice so far.My potatoes got a head start on me. Any potato heads out there to give me some input on how to save them.
